Ingredients

  • 4 Chicken Thighs, chopped
  • 1 Tbsp Canola Oil - Salt & Pepper to taste
  • 1/2 White Onion, chopped
  • 1 Cup Chopped Bell Pepper Mix
  • 1 15oz can Corn, drained & rinsed
  • 1 15oz can Black Beans, drained & rinsed
  • 1 15oz can Diced Tomatoes - 1/4 cup Chopped Cilantro
  • 1 Jar Chilau Stew Base (Low Country Citrus | Original and Creole also work) 
  • 1 Cup Sour Cream
  • 3 Cups Chicken Stock/Broth
  • Lime Juice to taste

 

Preparation

  1. Season chopped chicken thighs with canola oil, salt, and pepper.
  2. Brown chicken in a pot over high heat, stirring occasionally.
  3. Add onions and bell peppers, cooking them with the chicken for an additional 10 minutes.
  4. Stir in corn, black beans, and diced tomatoes, mixing well.
  5. Pour in Chilau Stew Base, sour cream, chicken stock, and lime juice, then simmer on medium heat for 15 minutes.
